ORONO, Maine — Maine Maple Sunday is March 24. The maple trees are tapped, or soon will be, and the wait is on for the sap to start flowing in earnest.
According to Kathy Hopkins, a maple syrup expert with University of Maine Cooperative Extension, a cold January and February, followed by daytime highs from 40-45 degrees Fahrenheit and overnight temperatures in the mid-20s, produce the best syrup.
