PUEBLO, Colo. — The Colorado State Fair is seeking two new year-round concessionaires to conduct operations in the fairgrounds amphitheater and the building currently known as Manhattan’s, both located at 1001 Beulah Avenue in Pueblo.
Concessionaire proposals will be evaluated on minimum qualifications, experience, menu and pricing, vision and concept and the soundness of methods proposed to complete the project. Concepts with Colorado Proud featured items will be given preference in the selection process.
The amphitheater concession is located in an asphalted area on the east end of the fairgrounds and is approximately 150’ x 100’ in size. Manhattan’s is located on the south side of the fairgrounds and offers both indoor and outdoor seating. Both concessionaires are required to serve lunch, dinner and alcohol. Hours of operation during the 2021 Colorado State Fair, August 27-September 6, are agreed upon in advance of the 2021 season. In addition, both concessionaires agree to be open for any events that utilize the entire fairgrounds.
