SIOUX FALLS, S.D. — Through its Restaurant of the Year Award, the South Dakota Pork Producers Council (SDPPC) recognizes restaurant owners and managers for their efforts in preparing and promoting quality pork products. This year Backyard Grill of Brookings and Sioux Falls, South Dakota received this award on January 11, 2017 during the 48th Annual Pork Congress Master Pork Producers Banquet at the Sioux Falls Ramkota.
Backyard Grill of Brookings and Sioux Falls. Backyard Grill LLC has evolved into a family business that encompasses 3 restaurants and a food truck. We started 11 years ago in a temporary location in front of Running’s in Brooking in a wood shack that was 8×16 foot. Our operation was only seasonal from Memorial Weekend to Labor Day. We were only open for lunch and dinner. The first 4 years was working out of the shack 2 years in front of Running’s and the last 2 years was next to Brookings Auto Mall and Car Quest. Since the beginning, pork has been our main meat in the BBQ world. We were catering upwards to 1000 meals a week out of our little BBQ shack. The first few years we were using around 425 lbs. of Pork.
We were asked to leave our location because of all the traffic in front of Car Quest. They believed their customers could not get to them. This opened up the opportunity for a brick and mortar restaurant. We started our first full blown restaurant 2009. This was exciting, needing more storage for cold meats was only our first growing pain. Four years later we started our second restaurant south in Sioux Falls, and opened our third restaurant downtown Sioux Falls on Phillips. In Brookings we have received Taste of Brookings championship two years in a row.
One of our exciting areas of food is our Food Truck. This Truck was originally a Swat vehicle in Texas. In the summer our truck is out in different areas just about every day. Pork is our most requested product. We have increased out usage dramatically since 11 years ago. This past year we have used over 58,400 pounds of pork butts, 29,300 pounds of ribs, and 1,900 lbs. of bacon, we have just added ham to our menus and we have only used around 875 lbs. We are very excited about the quality of pork we receive from our Midwest venders.
The South Dakota Pork Producers Council (SDPPC) was created in 1954 to responsibly serve, support and enhance the success of the South Dakota pork production industry. Along with managing industry issues and improving the image of the pork industry, the South Dakota Pork Producers Council works to insure a safe, wholesome product for the consumer’s confident consumption.
South Dakota’s pork producers have 170,000 sows and they produce 339,000 farrowings per year. South Dakota is ranked #11 in pork production and ranks #2 in pigs per sow. South Dakota ranks 9th nationally in number of pigs born in the state. South Dakota’s pork industry contributes $2.1 billion overall economic impact of SD’s Swine Industry. Also, South Dakota pork industry contributes $17.4 million in total tax revenue.
