GAINESVILLE, Fla. — PEANUTS – You can find three of the human body’s most critical building blocks – protein, fat and fiber –in the humble peanut. New research shows peanuts also are an excellent source of compounds that block the absorption of cholesterol from the average diet, elevating the legume to superfood status.
For years, UF/IFAS researcher Barry Tillman has been helping Florida’s peanut growers produce disease-resistant crops with greater yields. Now, with the benefit of nearly $1 million in USDA grants and assistance from colleagues at UF and the Georgia Institute of Technology, Tillman is working on a drought-resistant variety that will help farmers produce even more peanuts with less water.
