BRIGHTON, Colo. — The Colorado Egg Producers (CEP) member farms each year donate an estimated 1 million eggs to local food banks, and holidays like Thanksgiving are among the key times of the year when those donations pile in and are distributed to those in need.
In addition to being a source of sustenance for those less fortunate, local food bank leaders say these donations are greatly appreciated in that eggs have a place in such an abundance and diversity of foods, and also have a wealth of nutritional benefits, providing high-quality protein and essential vitamins and minerals.
