FREEPORT, Ill. — Join Illinois Extension’s Nutrition and Wellness Educator, Diane Reinhold, for Yes! You Can: Preserve It Safely workshop Freezing Your Summer Harvest. The Freezing Your Summer Harvest workshop will be held on Thursday, May 17, from 5:30 – 8:00 p.m. at the Illinois Extension Office, 2998 W Pearl City Road, Freeport, located in the Community Services Building at Highland Community College (use parking lot B). Spring is here and the growing season is upon us. Many of you may be getting excited, to get out and enjoy your gardens, while others are already watching the asparagus and rhubarb grow. “One of the best things about having a garden is being able to enjoy your garden year round. Although, in this part of the country we are not able to grow traditional gardens year round, we can still enjoy the bounty of our gardens by either freezing, canning or drying” states Illinois Extension Educator, Diane Reinhold.
Freezing is one of the easiest and least time-consuming methods of preserving food. Best of all it allows us to keep the natural color; fresh flavor and nutritive qualities of most foods better than other known food preservation methods.
However, like many things in life, to be successful you need to have a good understanding of the processes involved. Understanding the science behind freezing makes a world of difference in whether you have a good or great product. To learn more about freezing safely plan to attend!
