Judith D. Schwartz, Author
Judith D. Schwartz is an author whose work explores the ecological role of animals in the landscape. She lives and works on the side of a mountain in southwestern Vermont. She is the author of Cows Save the Planet, Water In Plain Sight and The Reindeer Chronicles. https://www.judithdschwartz.com/
Michael Lapi, Chef-Instructor, SUNY Cobleskill
An instructor of Culinary Arts and Meat Processing at SUNY Cobleskill, Michael provides a platform for the promotion of locally sourced foods through Farm to Table and Whole Animal Butchery classes.
Matt LeRoux, Extension Associate at Cornell University
Matt LeRoux has 20 years’ experience serving farms through Cornell Cooperative Extension, non-profits, and consulting, working with produce and livestock farmers and food businesses. He developed the Marketing Channel Assessment Tool for produce growers and the Cornell Meat Price & Yield Calculator.
Stacylyn Himelright, Cattle Procurement Lead, Cargill Beef Plant, Pennsylvania
Stacylyn Himelright is the Cattle Procurement Lead/Head Buyer at the Cargill Beef plant in Wyalusing, PA, and was a cattle buyer in Eastern/Central NY state for nine years. She will lead a presentation on navigating cattle markets, answering questions about selling cattle.
