Come learn the latest in meat cuts from retired United States Department of Agriculture (USDA) Livestock and Meat Marketing Specialist Steve Olson.
Steve will be demonstrating some of the beef cuts he helped develop while at USDA. These cuts can add value to your direct marketing/freezer trade sales! He will also discuss software he helped develop highlighting meat cuts. Steve will perform beef cut demonstrations that will pertain to other species too.
